Magickal Meals - No Bean Chili
I am always on the hunt for meals that i can throw together and walk away from. I have days that are so super busy I am simply not able to gather enough brain cells together at the end of them to cook anything, and sometimes take out just does not cut it. I know we have all been in that place more than once!
 
I decided this week that I wanted chili, I did have some non-negotiable requirements though. I like spicy and flavorful, but I did not want hot. No beans. I know, some of you are screaming "it's not chili without beans!". But, the man of the house doesn't like them, and I am trying my best to cut back on carbs, so no beans it is! Lastly, and certainly not least, it needed to be inexpensive and fast to make. Seriously, who has time to hover over a pot for twelve hours stirring like one of Macbeth's witches? yeah, me neither.
 
After a brief consult with Mr Google I found the perfect recipe that required only minor tweakage to be utterly perfect to cook in my multifunction pressure/slow/rice/yogurt cooker you know the one I am talking about.
 
This chili comes together easily and is ready to serve in thirty minutes if you want to cook it on the stove top. Or you can put it all together and let it slow cook for 2-3 hours and its amazing!
 
Ingredients
2 pounds ground beef
1 green bell pepper finely chopped
1 large yellow onion finely chopped
2 14.5 oz cans diced tomatoes
1 6 oz can tomato paste
2 cups beef stock
1 1/2 tablespoon chili powder
1 1/2 teaspoon paprika
1 1/2 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground cumin
1 1/2 teaspoon salt
1 teaspoon black pepper
4 tablespoons garlic minced

Instructions
Add your ground beef to a large stock pot. Use your spatula to crumble the beef. Add in your chopped green pepper and onion. Cook on medium high, stirring occasionally, until beef is browned.
Drain excess grease if you need to.
 
Once your ground beef is cooked add the tomatoes and tomato paste, stir in well and let it simmer for a couple of minutes.
 
Add in the spices. Stir. Cover and let simmer for 20 - 25 minutes.

Serve however it is that you prefer your chili.
 
To make it in an Instant pot, set your pot to saute, brown the beef, add in the green peppers and onions. let this cook for 2-3 minutes. Add tomatoes and tomato paste, stir well and let cook for a minute or two.
 
Add in spices, stir well and set your pot to slow cook for three hours. Put the lid on and walk away.
