Magickal Meals: Key Lime Pie Ice Cream

With so much focus lately on self-healing and dealing with old trauma, sometimes you just need to stop and pay attention to yourself.  

Self-care is distinctly multi-faceted, from proper rest and exercise to treats from time to time. It's all part of making ourselves feel energized and able to take on the world.  

Sometimes, in all that balancing, exercising, and resting, we just need to stop and have a treat. This time of year, something sweet, and a little tart and very definitely fresh and bright would hit the spot. Ice cream, of course, is always perfect.  

I found this wonderful recipe on southernliving.com and it really does hit the spot, both in taste and energetically. While it is a bit of a time investment in mixing and freezing, magickally speaking, this recipe is a perfect blend of love and prosperity energies. 

In butter, condensed milk and whipping cream we have prosperity, love, healing, and fertility energies. The sugar both on its own and in the condensed milk underlays everything with love. Vanilla brings us physical love, while lime is purifying love. Salt ties everything together with its focus on grounding and purification. Making this recipe utterly perfect when we are talking about self-care with its emphasis on helping us feel loved and pampered and empowered to do anything we want. 

 

Ingredients 

  • 4 graham cracker sheets, coarsely crumbled 
  • 2 tablespoons unsalted butter, melted 
  • 2 teaspoons granulated sugar 
  • 1 (14-oz.) can sweetened condensed milk 
  • 1 tablespoon grated Key lime zest (from 4 Key limes) 
  • ⅓ cup fresh Key lime juice (5 to 6 Key limes) 
  • 1 teaspoon vanilla extract 
  • ¼ teaspoon kosher salt 
  • 2 cups heavy whipping cream 

Directions 

  1. Stir together graham cracker crumbs, melted butter, and sugar in a medium bowl; set 1 tablespoon graham cracker mixture aside. 
  2. Stir together condensed milk, lime zest and juice, vanilla, and salt in a large bowl; set aside. Beat cream in a separate large bowl with an electric mixer fitted with a whisk attachment on high speed until stiff peaks form, 2 minutes. Fold whipped cream and remaining graham cracker mixture in bowl into condensed milk mixture. 
  3. Spoon into a 9- x 5-inch loaf pan. Sprinkle with reserved 1 tablespoon graham cracker mixture. Cover; freeze until firm, about 6 hours.

Chill Time: 6 hrs 

Total Time: 6 hrs 15 mins 

Yield: 1 quart
